Exotic Sweet Desserts
If you're going crazy for mango sticky rice, you have 2 options. One - head straight to Tesco Extra's food court at Penang Sg Dua, zoom into the Thai corner, dine and you'd be fine! Not many eateries in Penang offer scrumptious mango sticky rice, but this little Thai's Khao Niaow Ma Muang deserves to be highlighted. Their sticky rice is soft, blends perfectly with the creamy coconut milk sauce and ripe mango is simply delicious, and cost less than RM5!

Ingredients (makes 2 servings): 2 ripe mangoes 1 cup Thailand origin glutinous rice or sticky rice 1 cup water 1 can coconut milk - divided into 2 portions i.e. 30% and 70% 3 tbsp raw sugar/cane sugar 1/2 tsp cornstarch (or tapioca flour) salt to taste screwpine (pandan) leaves - blended for juice (optional)
Method: Sticky Rice 1. Soak sticky rice at least 2-3 hours, better if over night. 2. Drain and rinse throughly. Pour 1 cup of water. Optional: If you would like to have a green aromatic sticky rice, replace 1/4 water with screwpine (pandan) juice. 3. Steam the sticky rice about 20-30 minutes or until the grains are tender and shiny. 4. While steaming, gradually rub the sticky with 30% of the coconut milk. 5. After the sticky rice is cooked, set aside to cool off.
Creamy coconut topping/sauce: 1. In a saucepan, combine 70% of coconut milk, sugar and salt. Stir on stove with low fire. Never boil coconut milk because high temperature tends to harden the fats and they will surface up. 2. Add cornstarch to thicken the sauce. 3. Stir to mix well. Add salt to taste.
Final serving Peel mangoes. Slice into bit pieces. Present mango next to the sticky rice and enjoy!
