One of the best restaurant food served in United States is Vietnamese noodles. On my last stay many years ago, I did try in other states and they were fabulous! What's interesting is their Vietnamese coffee and pho. And I love the fresh vegetables accompaniment. Typically, most Vietnamese restaurants in United States offer relatively a better pho than what I could get in my home country whereby Vietnamese cuisine is over-priced and under-valued.

Phở or in correct Vietnamese language pronounces as 'fur' is  a famous Vietnamese noodle soup originated from North Vietnam. The soup which usually prepared from beef broth is served with rice noodles. It is also offered with other fresh accompaniments like basil, lime, bean sprouts and green peppers.

In a chilled evening of fall, having a bowl of pho is extremely satisfying to warm up my tummy. As usual, the portion is considered huge for a petite Asian lady like me (braggg!Tongue out) but there is always an option for packing to-go when I couldn't finish it.

Pho Saigon Noodle House which is located at Chinatown Center in N. Lamar Blvd. was my first Vietnamese restaurant in Austin.  Guess we are at the right place again this time. In less than a month, we had visited Pho Saigon twice although there are more than a few dozens of Vietnamese restaurants in Austin.
Beef Stew Egg Noodle
Besides pho, the restaurant also serves egg noodle soup which the texture is similar to the Malaysian Wan Tan Mee and there are several variations like beef stew, pork meat ball, beef balls and more.
A bowl of pho..I'm lovin it!
To further understand about pho, I did a bit of googling and apparently in the traditional pho, sá sùng (Sipunculus nudus, a species of peanut worm) is added to the broth to sweeten it. Apart from this secret ingredient, cà cuống or a pheromone extract from the giant water bug (Lethocerus indicus) is also sprinkled to give spicy and aromatic flavors to the pho. Are the modern restaurateurs still holding up to the traditional recipe? Mmm..it would be interesting to find out!
